Last few weeks have been very busy! Uni is full with group work, assignments and exam studying. AND! I’ve got a new EXCITING job! My dream job in fact. And you guessed it, it is nutrition related. I will tell you more about that later.

Anyhow, if you follow me on my facebook page you know I decided to do the carb cycling diet all over again as I got the flu the final week. So I’ve started on it again this week, and I am going to be more strict about it this time.

I decided to start off with 3 days of juicing and all natural foods. The reason why is to get myself into a fat loss state of mind, meaning I want to see results quick to keep myself on track and motivated. And just by a day 1kg down and feeling leaner! It’s soon summer folks!

Bought myself a juicer over the weekend, and I must say, it looks great in the kitchen and it makes amazing juices.

McDONALD’S IS NOT UNHEALTHY.

Every time I meet a new fellow human, you tell them your name, they tell theirs, what you do and so on. And EVERY single time I say I study Nutrition they say: “Id bet you wouldn’t approve of my diet!”.
I then continue to ask them; “So, how is your diet?”
Then suddenly, usually, they have a change of mind and say nah I do eat pretty healthy, like I am going to judge them one their eating habits.
But there was one time a man asked me; “I guess you wouldn’t approve that I drink a beer after work a few times a week”. I followed up asking him if that made him happy. And by a surprised face he said yes. “Hang on, why did you ask me that?”.
“Well if that after work beer makes you happy and most of your diet is based on whole foods I’m not going to say that one beer now and again is bad for you. If I took that beer away, you wouldn’t be happy.”

He walked away with a surprised happy face..

Healthy isn’t all about eating “the right things”. It’s all about balance. Youd be miserable eating “healthy” every day. Nothing is unhealthy. Really, except pure sugar, as it does not contain any nutrients that is beneficial to your body. Just empty energy. But then again, sugar has its benefits in some cases.

Lets take a McDonald’s meal to test. Most of us, if not everyone would classify a Big Mac meal as unhealthy. It isn’t unhealthy. It has fats, carbs, protein, vitamins and minerals. Which is all essential for your body. But it also has other stuff that isn’t essentials to your body. As we all now, it is highly processed. If your body could pick between a Big Mac and a homemade hamburger. It would of course go for the homemade burger. But what my point is, nothing is really unhealthy. Some foods are more ideal to your health and body than others. I’ve been eating McDonald’s 3 times a week before and kept my weight the same, if not even lost some fat. As the rest of my diet was based on home cooked meals made from scratch. I wouldn’t recommend for any to go to McDonald’s 3 times a week, not even once a week. But now and again, not an issue.

This is one thing that I hate about these health gurus/experts etc. They call what we classify as unhealthy foods as poison or rubbish. They look down at people who eat the “poisonous” foods and creating a bad community and a negative vibe. I’m not gonna lie and say I havent been one of those, because I have. I’ve been anti this and anti that. Good thing is that I have an open mind and like to educate myself.

So don’t ever feel bad or naughty if you decide you can’t be bothered to cook one day and any fast food seems like a good option. Just don’t make it a habit.

CHICKEN IN COCONUT MILK AND SOMETHING ELSE

I have a great passion for cooking and the kitchen is certainly my happy place. If it’s either baking, cooking, for myself or loved ones.
To eat good is important for me. After all the chicken and vegetables I’ve consumed the last few years, I’ve figured out few tricks how to make my meals like a every day luxury.
And lucky for you I am going to share one of them with you today.

We all have had dry boring chicken. Ive got the best trick how to get your chicken delicious and juicy! And its easy and cheap. Simply oven bake your chicken in coconut milk. Man I’m telling you the chicken will be the most juicy chicken you’ve ever tasted. And prefect for us who prep chicken in larger quantities.
The only thing you need is coconut milk, salt, pepper and herbs or spices. I would recommend to ass quite a lot of herbs(I used thyme here) and spices to get a nice flavour on your chicken. As the coconut milk doesn’t really add too much flavour, its more for the juicyness. Bake it in the oven for about 40-45 min on 200 degrees. I would also recommend that the coconut milk should cover all the chicken.  Or the bits that stick out will get a bit dry, unless you turn them around half way through cooking time.

Another thing that is OUT OF THIS WORLD, is having a parsnip purée as a side dish. Not only is this a great substitute for mashed potatoes(or potatoes in general if you want a low carb option), but it taste a hell of a lot better than mashed potatoes if you ask me. Its high in fiber and a decent amount of plant protein as well! This is truly something you want on your dinner plate. And the best part, it’s so easy to make and very cost-effective!
You need:
  • 2 1/2-3 Parsnips
  • 1 generous tsp butter
  • ca 30 ml cream or milk(if using milk boil it before and set a side)
  • Salt and Pepper
  • Garlic is optional
Peel and cut up the parsnips into small pieces, boil them for about 5-7 min in salty water until tender. Add the parsnips, butter and milk/cream in a food processor and blend until you get a very smooth and creamy consistency. This is so easy.

SWEET SWEET POTATOS

One thing have really got a thing for is sweet potato fries. You can flavour them in any way you want and they always come out delicious. Todays dinner was homemade turkey burgers, sweet potato fries and some salad. And it tastes like a real treat.

If you havent made them yet, this is how you do it:
Start off with cutting up your sweet potato(s) in a desired shape. Add them to a bowl and drizzle olive oil and make sure they are all coated.
Add desired spices, I used Jerk, Mild Tandoori Curry powder(this is the bomb) and smoked paprika.

Mix them, and put them in the oven on 220 degrees for ca 15-20 min.

CRAB & AVOCADO CREAM SALAD

So update on my foot. The doctor pretty much told me there is nothing you can do about it than just wait until its healed and take painkillers. Both a relief and bit annoyed as it can take up to 6 weeks to heal.
Anyway, Ive got an amazing new recipe for you! Its quick, its easy and requires no cooking time. And the best part, its absolutely amazing! You have to try it!


Crab & Avocado Cream Salad:
 
1 Avocado
1 Fresh Jalapeno Chilli(Other chilli will also work)
1 clove Garlic
1 small hand full parsley
1 tbs White Wine Vinegar
1/2 fresh Lime Juice
1 generous tbs Creme Fraiche
1 tin Carb meat (or if you have fresh even better)
Salt and pepper to taste


Add all ingredients except the crab in the food processor.
Mix for up to 1 min to get a creamy texture.


Add in your crab meat and fold it in the avocado cream.


Mix up a leafy salad with some cherry tomatoes or desired vegetables, drizzle some extra virgin olive oil and some salt and pepper and top op with your crab and avocado cream.


This meal is rich in good fats and protein. Enjoy.
